For cooks who swear by the microwave oven, Microwave Cookery, edited by Sarah Brown, is a must. Not only does it explain in great detail just how a microwave oven works, but it offers a trouble-shooting section which surely answers every possible microwave cooking question, as well as a detailed guide of foods which can, and cannot, be cooked in the microwave.
Specific microwave cookery techniques are explained, accompanied by the same clear illustrations and photographs which illuminate the entire book. Part of the Dorling Kindersely Pocket Encyclopedia series, this book is, indeed, encyclopedic.
Recipes are naturally a major part of the book and the tasty collection here includes everything from Barbecue-style Baked Potatoes to Saffron Rice with Mangetout and Roast Chicken with Red Currants. Each has an eye towards nutrition and many of the recipes are either vegetarian or balanced to include a minimum of fat and animal protein. Each recipe is accompanied by a key which details preparation and cooking time, power setting, whether the dish is good reheated or whether it freezes well, and the number of servings, as well as timely cooking tips or seasonal substitutions.
